• Open-Air Social Dancing at CityDance (Thursday, Sept 24): Head downtown for CityDance San José! Enjoy an evening of outdoor music, socializing, and fun dancing with professional instruction. It’s a gentle, joyous way for seniors to stay moving and socialized in a safe, open-air environment.

🥣 Recipe: Cozy Roasted Pumpkin & Apple Soup

To celebrate the first week of fall, we’re sharing a velvety, warm soup packed with beta-carotene, fiber, and soothing seasonal spices. It is gentle on digestion and perfect for cozy autumn evenings.

Ingredients:

  • 1 can (15 oz) pure pumpkin puree (or 2 cups roasted local pumpkin)
  • 2 sweet apples (peeled, cored, and chopped)
  • 1 small yellow onion (diced)
  • 3 cups low-sodium vegetable or chicken broth
  • 1/2 tsp ground cinnamon & a dash of nutmeg
  • 1 tbsp olive oil & 2 tbsp Greek yogurt (for garnish).

How to cook:

  1. Sauté the chopped onion and apples in olive oil in a large pot until soft (about 7–8 minutes).
  2. Stir in the pumpkin puree, cinnamon, nutmeg, and broth.
  3. Bring to a gentle boil, then simmer on low for 15 minutes, until the apples are completely tender.
  4. Puree with an immersion blender until smooth, season with a pinch of salt, and serve warm with a dollop of Greek yogurt.
