As the final days of May wind down, we are looking forward to a spectacular June in the South Bay. This month, our city transitions from the “spring bloom” into the high energy of summer. Upcoming in June: Local Events to Watch

  • Senior Color Walk (Friday, June 5): Kick off the month at Lake Cunningham Park (9:00 AM – 12:00 PM) for the VTA-sponsored Color Walk. It’s a flat, scenic route perfect for catching up with friends while getting those steps in!
  • Senior Hour at Roosevelt (Starts June 16): The Roosevelt Community Center begins its summer “Senior Hour” on Tuesdays and Thursdays. It’s a safe, cool, indoor space to socialize and receive local resources.
  • FoodieLand San Jose (June 26-28): For our senior food lovers, the Santa Clara County Fairgrounds will host FoodieLand. Our caregivers can help you navigate the crowds and find the best accessible seating to enjoy the global flavors.

Recipe: “Hydration Hero” Watermelon & Feta Salad

In June, the San Jose heat can sneak up on us. This salad is over 90% water, making it a delicious way to stay hydrated.

Ingredients:

  • 4 cups cubed seedless watermelon
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves (torn)
  • 1 tbsp extra virgin olive oil
  • A squeeze of fresh lime juice

The How-To:

  1. Prep: Place the watermelon cubes in a large chilled bowl.
  2. Toss: Add the mint and feta.
  3. Drizzle: Whisk the oil and lime juice together and pour over the salad.
  4. Serve: Enjoy immediately for maximum crispness!
